Baja California is the heart of our operations, where the natural richness of the environment and the intensity of marine currents combine with our sustainable practices to produce seafood of the highest quality, delivering a fresh and unique flavor.
We are part of the place where our products originate; this is where they are born, grow, and acquire their unparalleled quality.
Our farming area, located within the Laguna de Guerrero Negro, allows us to keep our oysters safe, as they come from one of the most exclusive areas in the industry, ensuring cleaner and purer oysters. In this same location, we carry out the hatchery and development of oyster seeds until they reach the ideal size for commercialization, always committed to the care and dedication required to guarantee products that meet real quality standards.
We begin by growing the oyster spat on racks until they reach a suitable size. They are then transferred to oyster bags for further growth, with constant maintenance of the cultivation lines and the product at sea.
Once the oysters reach the ideal size, they are harvested and taken to our local plant, where they are sorted by size and shape. They are then grouped into batches of 10 to 20 dozen.
The product is transported in refrigerated trucks to our certified plant in San Felipe, where it is packaged for export or domestic distribution.
Our processing plant in San Felipe is a key component of our quality management system. Here, our quality control team conducts a second inspection of the product. We hand-select and classify each item, processing them with standards and procedures that maintain freshness and excellence, ready for national and international distribution.
The clams arrive at the plant, where they are counted, placed in containers, and kept alive in vats of seawater.
The quality of the product is reviewed, discarding anything that does not meet standards.
The clams are packed in coolers with special protection and cooling gel, and transported to their destination, such as Los Angeles Airport.
Once its temperature is checked, it is washed and regrouped in containers. It is then stored in vats of seawater until delivery or export.
The oysters are placed in nets inside waxed boxes and transported in refrigerated trucks to their final destination, either to Ensenada or to customers in the United States.
